What Does a Pizza Food Cost Worksheet Track?
RH Now's pizza recipe worksheet gives you one row per cost component with columns for ingredient, quantity or unit, unit cost and line cost. It is designed for recipe-level costing and includes common pizza categories as prompts.
The worksheet helps organize ingredient and packaging costs. Labor and overhead should be considered separately when evaluating the full economics of an item.
PREBUILT COST LINES
Common Pizza Costs Already Listed
Dough
Track the dough portion used for the recipe.
Sauce
Record the portion and cost of sauce.
Cheese
Track cheese quantity and line cost.
Protein Topping
Use for meats or another protein component.
Vegetable Topping
Use for vegetables or similar toppings.
Seasoning
Include seasoning or finishing ingredients.
Box / Packaging
Include the packaging used to serve or deliver the pizza.
Other
Add another recipe-specific cost that does not fit the listed lines.
HOW TO USE IT
Build the Recipe Cost One Line at a Time
1. Standardize portions
Use the same recipe portions each time so the cost sheet represents what the kitchen is expected to serve.
2. Enter unit costs
Use current purchasing information and the unit that matches the recipe quantity. Update costs when supplier pricing changes materially.
3. Add the line costs
Total the ingredient and packaging line costs to estimate the direct recipe cost. If the recipe produces multiple portions, convert the batch total to a per-item amount before comparing it with menu price.
GO BEYOND THE WORKSHEET
Turn Recipe Cost Into a Pricing Decision
A recipe cost is only one input in menu pricing. Once you know the ingredient and packaging cost, compare it with the selling price and your target food-cost approach. Also consider labor, overhead, delivery-platform economics, discounts and other business costs separately.
